SUMMARY

ThisreporthasbeenpreparedbytheStatisticsDepartmentoftheInternationalOrganisationofVineandWine(OIV)andprovidesanoverviewoftheevolutionoftheworldwineproductionandconsumptionbycolouroverthe2000-2021period.Inthissection,themaininsightsandhighlightsofthestudyarepresented.

Redwine

World-Globalredwinesupplyanddemandhavesignificantlydecreasedinthelasttwentyyears.In2021productionhasdeclinedby25%sinceitspeakin2004.Thedecreaseisremarkablealsoinrelativeterms:atthebeginningofthecentury,redwinesaccountedonaveragefor48%ofthetotalwineproduction,whileinthelastfewyears,thesharedroppedto43%.

Production-Negativegrowthratesoverthe2000-2021periodareobservedacrossallmajorEuropeanredwine-producingcountries.Inparticular,itisworthnotingthesharpdeclineinFrance(whichnowadaysproduces50%lessredwinethanatthebeginningofthecentury)andItaly.Thesedeclinesareonlypartiallycompensatedbynon-Europeanproducingcountries,suchasChile,Argentina,Australia,theUSA,andSouthAfrica,whichshowpositivegrowthratesinredwineproduction.Amongthetop10countrieswiththehighestpercentageofredwineintheirnationalwineproduction,7arefromoutsideEurope.

Consumption-DemandforredwineinthelasttwentyyearshasdecreasedmainlyinlargeEuropeanmarkets–notablyGermany,France,ItalyandSpain.Thesecountrieshaveallrecordednegativegrowthratesforredwinesince2000.Incontrast,positivegrowthratesoverthelasttwentyyearsarerecordedinChina,theUSA,Russia,andBrazil.Thetop6countriesbypercentageofredwineintheirnationalwineconsumptionareoutsideEurope,notablyinSouthAmericaandEastAsia.

Whitewine

World-Whitewinedemandandsupplyatthegloballevelhaveexpandedsince2000.Productionofwhitewinehasincreasedin2021by13%sinceitslowestlevelin2002,andithasovercomeredwineproductionstartingin2013.Atthebeginningofthecentury,whitewineaccountedonaveragefor46%oftheworldtotal,whileinmorerecentyearsthisshareroseto49%.Oneofthemaindrivingforcesbehindthisincreaseistheboomofsparklingwine.

Production–ThemaincountriesthatcontributedtothegrowthattheworldlevelareItaly(drivenbytheglobalsuccessofProsecco),theUSA,SouthAfrica,andAustralia.Onthecontrary,someotherlargewhitewine-producingcountriessuchasFranceandSpain(secondandthirdwhitewineproducersattheworldlevelrespectively),haverecordedastabletrendsincethebeginningofthecentury.

Consumption-Theincreaseindemandforwhitewineismostlydrivenbythreeimportantsparklingwinemarkets:theUSA,Germany,andtheUK.Theriseinconsumptioninthesecountriesmorethancompensatesforthedeclinerecordedinlargewine-consumingcountriessuchasFranceandSpain.

Roséwine

World–Inthelasttwentyyears,roséwinehasgrownsignificantlyintermsofbothdemandandsupplyattheworldlevel.Globalproductionhasseenanincreaseof25%between2001and2021.Atthebeginningofthecentury,roséwinesrepresentedbetween6and7%oftheworld’sproduction,whileinrecentyearsitaccountedformorethan8%onaverage.

Production–Thesupplyofroséwineismuchmoreconcentratedthaninthecaseofwinesofothercolours,withthetop10producingcountriesrepresentingalmost90%oftheworldtotalin2021,andthetop3accountingfortwo-thirds.Inthecaseofrosé,itismostlytheNorthernHemispherecountriesthatleadthegrowth(Franceespecially),eventhoughcountriessuchasChileandSouthAfricahavealsoshownveryhighgrowthratesinthelasttwentyyears.

Consumption-Asinthecaseofwhitewines,thegrowthoftherosémarketcanbemainlyattributedtoanincreaseindemandintheUK,GermanyandtheUS.Franceisbyfarthemainmarketattheworldlevel,representingmorethanone-thirdoftheglobaldemand.

INTRODUCTION

Overthepastdecades,theworldwinesectorhasseenanoverallpositivetrendofproductionandconsumptionofwhiteandroséwines,whileredwineshavedecreased.Thisstructuralshiftcanbemainlyattributedtooverallchangesinconsumerpreferences.

Thisreportaimstobetterunderstandthisphenomenonbyprovidinganoverviewoftheevolutionofproductionandconsumptionofwine(includingbothstillandsparkling),brokendownbythethreemajorcolourcategories:red,white,androsé.Suchcomprehensivedataondemandandsupplybycolourconstituteagoodbasisformakingfurtherandmoredetailedstudiesinthefuture.

Thereportisstructuredintothreemainchapters.Thefirstchapterintroducestheclassificationofwinesbycolourandoutlinesthemaindatasourcesaswellastheestimationmethodsused.Thesecondandthirdchaptersprovideananalysisofproductionandconsumptiondatafrom2000to2021.Thesechaptersexaminetheworldevolutionandgeographicaldistributionofwinebycolour,offercountry-levelcomparisons,andidentifythemajorproducingandconsumingcountries.

1•DEFINITIONS,DATASOURCESANDESTIMATIONMETHODS

Thischapterbeginswithadescriptionoftheclassificationofwinesbycolour,followedbyanexplanationofthemethodsusedfordatacollectionandestimation.

1.1•Classificationofwinesbycolour

TheOIVhasageneraldefinitionforwine1,butnospecificdefinitionforwinecolours,whichcanbedescribedaccordingtothegrapevarietiesandproductionmethods,orbycolourdeterminationviaanalyticalmethods.

Redwineisobtainedfromredgrapesandisprimarilyproducedthroughmacerationandalcoholicfermentationofwholeorcrushedgrapeberries.Themacerationprocessconsistsofacertaincontactperiodwithgrapeskinswhichallowscolourationofthemustandthesubsequentwineafteralcoholicfermentation.Regardingwhitewine,themainproductionmethodconsistsofpressingthegrapesandfermentationwithouttheskins.Anexceptionisthewhitewineproducedwithmaceration2,whichischaracterisedbyanorange-ambercolour.

Toproduceroséwines3variousmethodscanbeused,includingpressingasinthecaseofwhitewine,ormacerationasinthecaseofredwinebutforshorterperiods.Blendingredandwhitewinetoobtainroséwineisnotpermittedinmanycountries,althoughtherearesomeexceptions.

AlltheothernecessaryandcomplementaryoenologicaltreatmentsusedinwineproductionarelistedintheOIV’sInternationalCodeofOenologicalPractices4.

Furthermore,thecolourofthewinecanbeexaminedbydeterminationofchromaticcharacteristicswithanalyticalmethodsdescribedintheOIVcompendium5.Thesemethodsallowquantifyingthecolourofwinebydifferentattributesorspecificqualitiesofvisualsensation.

1.2•Datasourcesandestimationmethods

Dataonproductionandconsumptionbycolouriscollectedfor27countries,whichincludethelargestproducersandconsumersintheworld,overtheperiod2000-2021.Thecountriesincludedinthedatasetrepresent93%oftheworld’swineproductionand76%ofwineconsumptionin2021.

Themaindatasourcesarethefollowing:

•OfficialdataprovidedbyOIVMemberStatesthroughquestionnaires;

•Officialreportspublishedbygovernmentalorintergovernmentalagencies;

•Reportspublishedbyorganisationsrepresentingthewinesectorortheagriculturalsector;

•Privatedataproviders;

•Specialisedpressandtechnicaljournals.

Itshouldbenotedthatincaseofmissingdata,estimationtechniquessuchasinterpolationhavebeenemployed.Inthecaseofworldtotals,estimatesarebasedontheinformationavailableonthecountriesincludedinthestudy.

Overall,obtainingpreciseinformationonwhiteandroséwinehasbeenparticularlychallenging.Themaindifficultyrelatedtowhitewineisthatitcompriseswinesthataredestinedforeitherelaboration(asinthecaseofsparklingwine)ortransformation(e.g.distillation,etc.);incertaincasesaggregationcanbequitecomplicatedandleadtodiscrepancies.Forwhatconcernsroséwine,themainproblemisalackofacleardefinitionandthereforeformanycountiesthiscategoryisincludedinredwine6.

2•PRODUCTION

Thischapterpresentswineproductiondatawithafocusontheevolutionoverthe2000-2021period.Itisdividedintotwosub-sections.First,theevolutionofglobalwineproductionbycolouranditsgeographicaldistributionispresented.Thesecondpartofthechapterprovidesanoverviewoftheevolutionofwineproductionwiththebreakdownbycolourofmajorwine-producingcountries.

2.1•Evolutionanddistribution

ofglobalwineproductionbycolour

Figure1depictsthetrendsbycolourinworldwineproductionovertheperiod2000-2021.In2021,theglobalwhitewineproductionisestimatedat130mhl,representing50%ofthetotalproduction.Redwine,with110mhl,accountsfor42%andtheremaining8%isroséwine,estimatedat21mhl.In2021,redwineproductionhasdeclinedby25%sinceitspeakin2004,whilewhitewineproductionhasincreasedby13%sinceitslowestlevelin2002.AscanbeseeninFigure1,theproductionofwhitewinehasexceededthatofredwinestartingfrom2013.Oneofthemaindrivingforcesbehindthisincreaseistheboomintheproductionofsparklingwine,asdescribedinthe2020OIVThematicFocusonsparklingwine7.

Figure5showstheaveragebreakdownoftheglobalredwineproductionbycountryforthethreefollowingperiods:2000-2006,2007-2013,and2014-2021.Ascanbeseenfromthegraph,therearecontrastingtrendsamongthemajorredwineproducers.

France,forexample,hasreduceditsaverageproductionsharefrom21.9%duringtheperiod2000-2006to13.9%during2014-2021,whileItaly’ssharehasdeclinedby1.6percentagepointsoverthesameperiod.

Alltheothercountriesinthetoptenhaveincreasedtheirrelativesharesofredwineinrecentyears,exceptforChinawhoseproductionshareincreasedduringtheperiod2007-2013butreturnedtothe2000-2006levelinrecentyearsduetoadropinoverallwineproduction.ItisworthhighlightingthesignificantincreasesintherelativesharesofSpain,Argentina,andChile,whichtogetheraccountformorethan25%oftheglobalredwineproductionnowadays.

Figure7showsthegrowthratesofredwineproductionofthetoptenproducersbetweentheperiod2000-2004and2017-2021.Allnon-Europeancountriesdemonstratepositivegrowthrates(exceptChina).Chile(+52%)leadsthisranking,followedbySouthAfrica(+48%),Argentina(+30%),Australia(+16%)andtheUSA(+4%).Incontrast,negativegrowthratesareobservedacrossallmajorEuropeanredwine-producingcountries.ItisworthnotingthesharpdeclineinFrance,whichnowadaysproduces50%lessredwinethanatthebeginningofthecentury.

2.1.2•Whitewine

AccordingtothedatapresentedinFigure9,therelativesharesofglobalwhitewineproductionbycountryhavenotseenverylargevariationsovertime,withthetopfivecountriesaccountingforalmosttwo-thirdsoftheworld’sproductionacrossallthreetimeperiods.

Italy’sproductionsharewasunchangedbetween2000-2006and2007-2013,butitincreasedby1.4percentagepointsbetween2007-2013and2014-2021.FranceandSpain,ontheotherhand,haveslightlydecreasedtheirproductionsharesfrom2000-2006to2014-2021.

Amongthetoptencountries,theUSAhasexperiencedthelargestincreaseinproductionshare,risingby2.4percentagepointsbetween2000-2006and2014-2021.Similarly,countriessuchasSouthAfrica,ChileandNewZealandrecordverypositivetrends.Argentinaonthecontraryshowsaconsistentdownwardtrend,downby2.5percentagepointsbetweenthefirstandthirdperiods.GermanyandAustraliaareamongthemorestableproducersintermsofrelativeshareattheworldlevel,withminorfluctuationsacrossthethreeperiods.

Intermsofgrowthratesofwhitewineproductionforthetoptencountries(Figure11),Chilestandsoutwiththemostsubstantialgrowthratebetweentheperiod2000-2004and2017-2021,byalmosttriplingitswhitewineproduction.ItisfollowedbytheUSA(+39.6%),Italy(+17.9%),SouthAfrica(+16.1%),Australia(+8.8%),andSpain(+1.2%).Incontrast,Argentina(-47.1%),Romania(-24.7%),Germany(-9.0%)andFrance(-3.5%)experiencednegativegrowthrates.

2.1.3•Roséwine

Theglobalproductionofroséwinehassignificantlyincreasedovertheperiod2000-2021.However,therelativesharesofthetop-producingcountrieshaveseensignificantvariations,especiallyforwhatconcernsthetwolargestproducers.

Francehasincreaseditsshareby7.5percentagepointsbetween2000-2006and2014-2021,becomingthefirstroséwineproducerintheworldwithashareof32%inrecentyears.

Conversely,Spainhasexperiencedasignificantdecreaseinitsproductionshareby8percentagepointsoverthesameperiod.TheproductionsharesoftheUSA,Italy,GermanyandArgentinashowsimilartrends,withadropbetween2000-2006and2014-2021.ItisworthhighlightingthegrowthofSouthAfrica,ChileandPortugal,increasingrespectivelyby2.4,2.0and0.2percentagepointsbetween2000-2006and2014-2021.

Therankinginabsoluteterms(Figure14)revealsthatthecountriesintheNorthernHemispherearetheonesthatcontributedthemosttotheproductionofroséwinein2021.Amongthetopthreeproducers,wefindFrance(6.5mhl),followedbySpain(3.7mhl)andtheUSA(3.4mhl).Thesethreecountriestogetheraccountformorethantwo-thirdsoftheglobalproduction.

2.2•Majorproducingcountries

Inthissub-section,thetoptenwine-producingcountriesin2021andtheirevolutionofwineproductionbycoloursince2000areanalysed.

Italy

In2021,Italyistheworld’slargestwineproducer,accountingfor19.2%ofglobalwineproductionwith50mhl(Figure17).Thebreakdownbycolourindicatesthatredwineproductionisestimatedat19.8mhl,whitewineproductionat29.4mhl,androséwineproductionat1.2mhlin2021.Sincethebeginningofthecenturytherehasbeenaconsistentdecreaseinredwineproduction,whichusedtoaccountforabout50%ofthetotalproductionandnowadaysrepresentslessthan40%.Onthecontrary,whiteproductionhasgainedmorethan10percentagepointsreachingapeakof60%ofthenationalproductioninrecentyears,notablydrivenbytheglobalsuccessofProsecco.Roséwineproductionshowsamorestablepathaccountingforabout2%ofthenationalproductionacrossthewholeperiod.

France(Figure18)isthesecond-largestwineproducerglobally,eventhoughits2021harvestishistoricallylow(37.6mhl).In2021,thebreakdownofwineproductionbycolouris12.2mhlforredwine,18.4mhlforwhitewine,and6.5mhlforroséwine.ThetotalFrenchwineproductionhassignificantlydecreasedsince2000.Redwineproductionhasdeclinedsignificantlybothinabsoluteandinrelativeterms,from33.5mhlin2000(56%ofthetotal)to12.2mhlin2021(33%ofthetotal).Incontrast,theevolutionofwhitewineproductionshowsaslightdeclineintermsofabsolutevolumebutastrongincreaseinrelativeterms:ifin2000itusedtorepresent36%ofthetotalproduction,in2021itaccountsforabout50%.Itisalsoworthhighlightingtheriseoftheproductionofroséwine,whichdoubleditsweightinthetotalproduction(from8%atthebeginningofthecenturyto17%inr
