FoodScienceFoodsciencedealswiththetransformationofrawagriculturalgoodsintofoodproductsacceptableforhumanconsumption.Thisfieldofappliedscienceinvolvesstudyingdiversescientificdisciplinessuchaschemistry,engineering,microbiology,biochemistry,toxicologyandmanagementastheyrelatetofood,andeffectivelyapplyingtheindustrialandpracticalaspectstoproductdevelopment,foodprocessing,preservationandmarketing.TheFacultyandFacilitiesFoodscienceisafour-yearcurriculumofferedbytheCollegeofAgriculture,FoodSystems,andNaturalResourcesthroughtheDepartmentofPlantSciences.TheprogramdrawsontheexpertiseoffacultymembersinseveraldepartmentsatNorthDakotaStateUniversitywhohaveexpertiseinbothteachingandresearch.Manyhaveindustryexperiencewithnumerousconnectionsinthefoodindustry.

TheQuentinBurdickBuilding(QBB)andHarrisHallatNDSUhouselaboratoriesandteachingfacilitieswheremanyofthefoodsciencecoursesaretaught.Extensivefacilitiesareavailableforteachingandfoodprocessingresearch.TheCurriculumTheprogramincludescoursesinfoodchemistry,foodanalysis,foodanddairymicrobiology,foodprocessing,foodengineering,meatscience,nutritionscienceandcerealtechnology,inadditiontobasiccoursesinmathematics,thesciences,humanitiesandsocialsciences.Mostoftheappliedcoursesinfoodsciencearetakenafterthebasiccourseshavelaidthegroundworkforthestudent.

Theprogramallowsflexibilityinselectingsuitableelectivestodirectone’scareergoal.Areasofemphasisincludefoodsafety,microbiology,sciences,businessandmanagement,engineering,nutritionandprocessing.TheCurriculumThecurriculumforfoodscienceisapprovedbytheInstituteofFoodTechnologists.Thefour-yearundergraduateprogramleadstoaBachelorofSciencedegreeinfoodscience.Theprogramenablesgraduatestorecognize,criticallyanalyzeandsolveproblemsrealisticallyinbothindustrialandacademicenvironments.Itprovidestheopportunitytogainindustrialexperienceduringundergraduatestudybymeansofindustryinternships.CareerOpportunitiesChallengingandrewardingentry-levelpositionsinthefoodindustryareplentifulforfoodsciencegraduates.Potentialemployersincludelargeandsmallfoodcorporationsandgovernmentagencies.Careeropportunitiesincludepositionsinfoodscienceandtechnology,foodchemistry,foodmicrobiology,productdevelopment,qualitycontrol,foodproductionandprocessing,foodinspection,packaging,salesandmarketing.CareerOpportunitiesFoodscientistsstudyfoodtoimproveexistingproductsorcreatenewones.Theyalsoanalyzethestructureandcompositionoffoodandthechangesthatoccur

duringprocessingandstorage.Theydeterminehowprocessingaffectsflavor,texture,appearanceandnutritionalvalue,andexplorenewwaystoprotectandstabilizefoodthroughpackaging.

Thefoodindustryisthelargestindustryintheworld.Thechallengesoffoodscientistsaretoprovidewholesome,tastyandnutritiousfoodsfortheconsumer.IndustryInternshipsInternshipsofferedthroughNDSU'sfoodsciencedepartmentandCooperativeEducationprogramsprovideopportunitiesforindustryexperienceatcompaniessuchasGeneralMills,AmericanCrystalSugar,ConAgra,RomanMeal,Hormelandothers.FinancialAidandScholarshipsLoans,grantsandwork-studyaremadeavailablethroughtheOfficeofFinancialAidandScholarships.AnumberofscholarshipsareawardedeachyeartostudentsenrolledintheCollegeofAgriculture,FoodSystems,andNaturalResources.Departmentalscholarshipsalsoareavailable.Informationmaybeobtainedbycontactingthecoordinatorofthefoodscienceprogram.Anumberoflaboratoryassistantjobsareavailableforstudentsmajoringinfoodscience.SampleCurriculumSampleCurriculumThissamplecurriculumisnotintendedtoserveasacurriculumguideforcurrentstudents,butratheranexampleofcourseofferingsforprospectivestudents.Forthecurriculumrequirementsineffectatthetimeofentranceintoaprogram,consultwithanacademicadvisororwiththeOfficeofRegistrationandRecords.
