Withthesefiguresfiguresknowntoyou,youcancalculatetheamountofmise-en-placeneedede.g.,300peopleinHouse,approximately300breadrolls,150croissantsforbreakfast,100Danishpastries,howmanyplates,crockeryandcutleryneedonthedayandhowmuchfoodistoberequisitionedandprepared.
