西餐礼仪范文 西餐礼仪 摘 要 本文简要的对西餐及西餐礼仪的含义进行概括,并对西餐礼仪在中国的发展,及 _人的生活影响进行了概述,重点说明西餐礼仪的重要性。然后对西餐礼仪中的席次的安排、西餐的菜序、西餐的餐具的摆放、使用及作用及进餐礼仪进行了重点,详细的介绍,旨在全面地、有序地、而又简洁地对西餐礼仪进行介绍。并进行自己的一些建议。 关键词 :西餐、席次的安排、西餐的菜序、西餐餐具、进餐礼仪 一、引言 随着改革开放的深入和全球化进程的加快, _逐渐西化,其中的一个表现就是西餐。西餐业在在近几年出现了比以往任何时候都快速发展的趋势,并迅速地成为了一个产业。既然西餐已开始渗入我们的生活,我们就该学习西方的西餐礼仪。由于西餐是外来文化,中国人对西餐礼仪知识的缺乏和错误理解,使得西餐礼仪研究更具现实意义。 二、中西餐礼仪的差异 (1)中国人有句话叫“民以食为天”,由此可见饮食在中国人心目中的地位,因此中国人将吃饭看作头等大事。中国菜注重菜肴色、香、味、形、意俱全,甚至于超过了对营养的注重,只要好吃又要好看,营养反而显得不重要了。西方的饮食比较讲究营养的搭配和吸收,是一种科学的饮食观念。西方人多注重食物的营养而忽略了食物的色、香、味、形、意如何,他们的饮食多是为了生存和健康,似乎不讲究味的享受。 (2)在餐饮氛围方面,中国人在吃饭的时候都喜欢热闹,很多人围在一起吃吃喝喝,说说笑笑,大家在一起营造一种热闹温暖的用餐氛围。除非是在很正式的宴会上,中国人在餐桌上并没有什么很特别的礼仪。而西方人在用餐时,都喜 欢幽雅、安静的环境,他们认为在餐桌上的时候一定要注意自己的礼仪,不可以失去礼节,比如在进餐时不能发出很难听的声音。 (3)中西方宴请礼仪也各具特色。在中国,从古至今大多都以左为尊,在宴请客人时,要将地位很尊贵的客人安排在左边的上座,然后依次安排。在西方则是以右为尊,男女间隔而座,夫妇也分开而座,女宾客的席位比男宾客的席位稍高,男士要替位于自己右边的女宾客拉开椅子,以示对女士的尊重。另外,西方人用餐时要坐正,认为弯腰,低头,用嘴凑上去吃很不礼貌,但是这恰恰是中国人通常吃饭的方式。 三、西餐及西餐礼仪的概述 西餐这个词是由于它特定的地理位置所决定的。“西”是西方的意思。一般指欧洲各国“餐”就是饮食菜肴。我们通常所说的西餐主要包括西欧国家的饮食菜肴,当然同时还包括东欧各国,地中海沿岸等国和一些拉丁美洲如墨西哥等国的残要。西餐一般以刀叉为餐具面包为主食,多以长形桌台为台形。西餐的主要特点是主料突出,形色美观,口味鲜美,营养丰富,供应方便等。西餐大致可以分为法式、英式、意式、俄式、美式,地中海等多种不同风格的菜肴,不同国家的人有着不同的饮食习惯,有种说法非常形象,说:法国人是夸奖着厨师的技术吃,英国人注意着礼节吃,德国人喜欢痛痛快快吃? 西餐礼仪是西餐礼节、仪式的统称。是一套约定俗成的带有浓厚的西方民族文化背景的一种饮食习俗。它由一系列具有西方民族特色的具体礼节构成。是一个表现礼貌的系统而完整的过程,是一个人内在修养和素质的外在表现,也是西方国家人际交往中的一种艺术。 四、西餐在中国的发展 西餐也已经步入中国好多年了,20世纪80年代后,随着中国对外开放的政策的实施,中国经济的快速发展和旅游业的崛起,大量西方人再度涌入中国投资旅游,在北京、上海、广州等地相继兴起了一批设备齐全的现在花饭店,如世界著名的凯宾基斯、希尔顿、假日饭店。以经营法式西餐为主,英式、美式、意式。 俄式等全面发展的格局,从而适应了西方各国人来华投资旅游的需求。 西餐以其丰富的美容和独特的品位,已成为中国饮业的“新宠”。越来越多的中国人喜欢这种餐饮方式,他们觉得方便美味,经济上可以承受。尤其是肯德基、麦当劳等西式快餐占据中国快餐市场额大壁江山,中式快餐尚无法与之抗衡。 对于西餐人们已不再陌生,西餐已经在影响我们的生活,我们的内心已经喜欢是上这种餐饮,我们也会偶尔出现在一些西餐厅。由于经济的全球化的西餐礼仪也将是一个衡量我们素质的标准。掌握西餐礼仪知识并自觉运用将为我们在他人心中塑造良好的形象。西餐礼仪对我们已经越来越重要,作为21世纪的我们掌握西餐礼仪是我们的必备素质。 五、西餐的基本礼仪 (一)席次的安排 西餐席位排列的规则: (1)女士优先。在西餐礼仪里,排列用餐席位是,一般女主人为第一主人,在主位就位。而男主人为第二主人,坐在第二主人位置。 (2)距离定位。西餐桌上席位的尊卑,是根据其距离诸位的远近决定的。据主人的位近的位置要高于据主位远的位置。 (3)以右为尊,排定席位时,以右为尊时基本原则。就摸一具体位置而言,按礼仪规范其右侧要高于左侧之位。在西餐排席时,男主宾要排在女主人的右侧,女主宾排在男主人的右侧,按此原则,依次排序。 (4)面向门为上。在餐厅内,以餐厅门作为参照物时,按礼仪的要求,面对餐厅正门的位置要高于背对餐厅正门的位置。 (5)交叉排序。西餐排列席位时,应按照交叉排列的原则,及男女应当交叉排列,熟人和生人也应当交叉排列。一个就餐者的对面和两侧往往是异性或不熟悉的人,这样可以广交朋友。 (二)西餐的菜序 西餐有正餐与便餐之分,二者的菜序也有很大区别。 (1)正餐的菜序 西餐的正餐,特别是正规的西餐宴会,其菜序既复杂又非常讲究。一般,一顿完整的西餐正餐有把刀菜肴组成。进餐时间约需1-2个小时。 1、开胃菜。开胃菜,即用来为进餐者开胃的菜,也叫头盆、前菜,一般有蔬菜、海鲜、肉食所组成的平盘。 2、面包。西餐正餐面包一般是切面面包,在吃面包时,可以根据个人口味涂上黄油、果酱或奶酪。 3、汤。西餐中的汤必不可少,口感芬芳浓郁,具有极好的开胃作用。西餐有白汤、红汤、清汤等几种。 4、主菜。主菜时西餐的核心内容,西餐里的主菜通常有冷有热,但大都应当以热菜作为主角。正式的西餐宴会上,大体上要上一份冷菜,两个热菜。两个热菜中,讲究上一个鱼菜,由鱼或虾以及蔬菜组成。另一个是肉菜,为西餐中的大菜,时必不可少的,多用烤肉,配蔬菜,往往代表着此次哟梅花残的最高档次与水平。 5、点心。吃过主菜后,一般要上一些诸如蛋糕。饼干。土司。馅饼、三明治等西式点心,是那些还没有填饱肚子的人借此来填满肚子。要是已经吃饱了,可以不吃。 6、甜品。西餐中最常见的甜品由布丁。冰欺凌。甜品在正餐上,被视为一道例菜。因此,就餐者应当尽可能品尝。 7、热饮。西餐用餐结束前,还要为用餐者提供热饮,一般为红茶或咖啡,以帮助消化。西餐的热饮可以在餐桌上饮用,也可以换个地方,到休息室或者客厅去喝。 (2)便餐的菜序:开胃菜,汤,主菜,甜品,咖啡 (三)西餐餐具的使用 (1)餐具的摆放。西餐餐具主要用刀、叉、匙、盘、碟、杯等,讲究持不同的菜肴用不同的菜肴用不同的刀叉,饮不同的酒要用不同的酒杯。其摆放法为:正面放着汤盘,左手放叉,右手放刀,汤盘前方放着匙,右前方放着酒杯,餐巾放在汤盘上或插在水杯里,面包奶油盘放在前方。 (2)餐具的使用 刀叉:刀叉时人们对于餐刀、餐叉这两种西餐餐具所采用的统称。二者既可以配合使用,也可以单独使用。刀叉的类别及摆放位置,早正规的西餐宴会上,讲究吃一道菜换一副刀叉。吃每道菜,都要用专门的刀叉,既不能乱用,也不能从头到尾只用一副刀叉。刀叉的使用方式,有英国式和美国式两种。英国式的使用方法要求就餐者在使用刀叉时,始终用右手持刀,左手持叉,一边切割一边叉着进食。美国式的具体做法是右刀左叉,一鼓作气将要吃的食物切割好,然后再把右手的餐刀斜放餐盘前面,将左手的餐叉换到右手,最后右手持叉进食。刀叉有其暗示,通过刀叉的不同摆放,可以由就餐者向俺是本人是否还想再吃某道菜。在进餐期间,就餐者想要离开一会,应放下手中的刀叉,刀右叉左,刀口向内,叉齿向下,呈“八”字形状摆放在餐盘之上。如果就餐者不想吃了,可以刀口向内,叉齿向上,刀右叉左并列摆放在餐盘上。注意不要把刀叉摆放成十字型,这在西方人看来是十分令人晦气的图案。 餐匙:餐匙又叫调羹,品尝西餐时,餐匙时一种必不可少的主要餐具。餐匙分汤匙和甜品匙两种。餐匙各有各的用途,千万不要相互替代,要注意餐匙除了饮汤、吃甜品外,不可以用于其它食物;不要用餐吃在汤、甜品之中搅来搅去;用餐匙取食,不要过满,一旦入口,就要一次用完,不要一点一点吃。餐匙入口时,要以其前端入口,不要将其全部塞进嘴里;餐匙时用完后,不要放在原处,也不要将其插入菜肴或:直立“与餐具之中。 餐巾:餐巾对服饰右保洁作用,防止菜肴、汤汁落下来弄脏衣服;也可以用来擦拭口部,通常用其内侧,但不能用其擦脸、擦汗、擦餐具;还可以用来遮掩口部,非要剔牙或吐擦汗嘴里东西时,可用餐巾遮掩,以免失态。餐巾也有其暗示,西餐以女主人为第一主人,当女主人铺开餐巾纸时,暗示用餐开始,当女主人把餐巾纸放在桌上时,暗示用餐结束。就餐者如果中途离开位置,一会还要回来继续用餐,可将餐巾放在本人所左的椅子面上;如果放在桌面上,暗示我不再吃了。可以撤掉。 (四)西餐的进餐礼仪 (1)准时赴宴。不能迟到,也不要太早到。 全面介绍西餐礼仪英文版 Eating in American(I) 中国菜着重色、香、味,西餐讲究实惠。初到美国餐馆用餐,应该注意如下事项: 1)选择合适的餐馆(如:家庭式餐馆、特色餐馆以及自助式餐馆等);2)餐馆营业时间(上午11:30开门营业,直到夜晚);3)一般都应事先预订餐位:4)到达餐馆后,不能径直地到餐桌旁入桌,除非餐厅有“随意就坐”的告示;5)付款时,别忘了留给服务员一定比例的小费(一般为实际总额的10%15%)。 Eating out is one of the joy of being in the USA.The food is usually good and often excellent;the prices are reasonable ;and the service is mostly fine. Choosing a Restaurant 选择餐馆 Some restaurants are open for breakfast;others are open twenty-four hours a day.A number of restaurants call themselves family restaurants.Many of these serve no alcohol and have fairly restricted menus which include steaks,hamburgers,omelettes(炒蛋)and sandwiches,and all are at very reasonable prices.They may also serve smaller and cheaper childrens portios(份餐).Note that many American restaurants are speciatlyrestaurants .They may serve only,or mainly ,steaks ,seafood,etc. When to Eat 供餐时间 Many restaurants,especially the more expensive ones,open at about 11:30a.m.(midday,rather than 1p.m.,is the most normal time for lunch in the USA),and some remain open until the evening,so it is possible to order a meal throughout the afternoon. In many areas it is usual for people to leave work and go out for an evening meal at 5p.m.or 6p.m.,than waiting until later. Reserving a Table 预订餐位 Eating out is rather popular in the USA.And it is often necessary to make a reservation.You will sometimes see short queues of people waiting for tables at restaurants-its more pleasant to wait in the bar ,of course,if there is one-but there queues more quickly. Arriving at Restaurant 到达餐馆 When you arrive at most restaurant,you should not just go in and sit down-unless you see a sign saying Please seat yourself.Usually you will have to wait for a hostessor captain(领班)to escort(陪同)you to a table .Often there will be a sign that reads Please wait to be seated. Do not expect to share a table with other parties,even if the restaurant is crowed .It just isnt done. Many restaurant have a no-smoking section,in some place by lows. One excellent American custom is that after you have sat down your waiter or waitress will often bring you a glass or water(with ice naturally)and will keep on refilling it throughout the meal.(Most American are incapable of eating a meal without drinking something at the same time.)When your waiter or waitress takes your order,it is not very normal for one person to order for the whole table.Each person orders separately ,except in the most expensive restaurants. Summoning a waiter 召唤侍者 You may find your waiter unusually friendly.He may ask you how you are (Youre supposed just to say Fine),inquire whether you have a good day and ,later on say that he hopes you will enjoy your meal. To summon a waiter in a American restaurant you may call Bill,or Mary,or Claude,or whatever.Waiters and waitresses often actually introduce themselves when they first e to your table or wear name tags,you are permitted to use their first names. Paying the Bill 付款 The bill (often called the check)es usually with tax added but no service chare-though some restaurant do now add a service charge.The etiquette(规矩)books say that you should leave a ten per cent tip(小费)for lunch,fifteen per cent for dinner.The tip should be calculated on the basis of the total before the addition of tax. At many restaurant you can ask the waiter to bring the bill and than pay at a cash desk on the way out. The system is that if it is absolutely necessary to use a knife,people take the fork in their left hand,and cut off a piece of meat or whatever it is in the normal manner.Then they put the knife down,transfer the fork to their right hand,and only then do they transport the food to their mouth.This is clearly ludicrous(滑稽可笑),but it is considered good manners.There are several results of this system.First,if it is not absolutely necessary to use a knife,Americans dont use one,because obviously this greatly plicates(使复杂化)things,and you will therefore see them trying to cut things like potatoes,fish and even bacon(熏猪肉)with a fork.Second,towards the end of a course,since only one implement(器具)is being used,food has to bo chased around the plate with the fork and for the last mouthful the thumb has to be used to keep the food in place,although one is not supposed to do this.Third,tables are generally laid with one knife and two forks,the outside fork being for the salad.There is no need for foreign visitors to follow the American system and try to eat the salad with only a fork,but if you do use your knife,remerber to save it for the meat course.Even desserts(甜食)(except ice cream)are eaten with a fork if at all possible,and the spoon you see by your dessert is meant to be for coffee (but if you use it for your dessert no one will say anything). Some Breakfast Dishes 早餐食谱 Breakfast in a restaurant is a very enjoyable experience.If you order eggs in a restaurant,the waiter/waitress will ask you how you want them .You can reply that you want them scrambled(炒)or boiled.It is not sufficient,however,to ask for them friedyou will have to specify whether you would prefer them sunny-side-up(煎一面),over(两面煎),over-easy/easy-over(两面煎,但蛋黄仍然呈流体状).American sausage(香肠)es in slices and is quite spicy.But you can also have link sausage.American bacon es in small strips,can be rather fat,and is served crispy.It is usually very tasty,and you can eat it with your fingers.Hash brows(油炸土豆片)are shredded(切成碎片的)and fried potatoes.They are wonderful,especially with fried eggs and ketchup(蕃茄酱).Pancakes(薄煎饼) ,sometimes called hot cakes,are made with baking power.They are normally served in a pile,and you are supposed to put butter and syrup(果浆)on them.Jelly(果子冻)is jam and includes grape jelly,which is very tasty.Toast is often served already buttered.English muffins(松饼)are like small crumpets(烤饼)without the holes and are served toasted.You put jam on them.A biscuit(软饼)is a snall,scone-like bread roll,often served hot.Orange juice and coffer are often serced with breakfast. Eating in American(III) 美国人吃午餐和吃晚餐之前通常要喝点鸡尾酒,但在加利福尼亚州,人们大都喝葡萄酒。吃主食之前,一般都要吃一盘色拉。炸磨茹和炸洋葱圈可作为开胃食品,牛排、猪排和鸡(腿)为主食,龙虾、贝壳类动物以及各种鱼类甚至包括淡水鱼被统称为海鲜。炸土豆条是深受人们喜爱而且几乎成了必不可少的食物。另外应特别注意的一点,如有吃剩的食物,一定要打包带回家,以免浪费。 Cocktail 鸡尾酒It is quite usual to drink cocktails before lunch and dinner in America and somewhat less usual,except in California,to drink wine with a meal.You can either have a cocktail in the bar,if there is one,while you wait for a table or for friends,or you can have one served before your dinner es.At some restaurants the waiter/waitress will e to your table as soon as you sit down to ask if you want a cocktail,and you can then drink this while deciding what to order to eat.At others,there may be a separate cocktail waiter or waitress.In this case,you do not normally order wine from him or her but from the normal waiter-or the wine waiter is there is one.Do not hesitate to order Californian wines.They can be excellent and in many parts of the country are cheap. Salad 色拉 It is usual to have a salad with your meal,and a separate plate is provided for this purpose.The normal practice in America is to eat the salad before the main course.A wonderful American invention is the salad bar.In restaurants that have these salad bars the waiter does not bring your salad.You go to the salad bar and help yourself,usually to as much as you want.This is normally done after you have ordered your meal;you eat the salad while the main course is being cooked. Choosing from the Menu 选菜 American menus can look rather confusing at first sight,for they may use some terms which are unfamiliar to most vistors.Here are some points which may be useful. Fried mushrooms,fried onion rings (洋葱圈)and fried zuhini (小胡瓜)are sometimes served as starters (第一道菜).Potatoes most often e French-friedor baked.If you order a baked potato,the waiter will ask you what you want on it.The choice is butter and/or sour cream and sometimes chives (细香葱). Very often vegetables do not e automatically with the meal,and you have to pay extra for them. Scrod(小鳕鱼),red snapper(啮龟)and mahi hahiare all name of fish.Seafoodmeans lobster (龙虾),shellfish and fish,including,funnily enough,freshwater fish!Prawns (对虾)are known as shrimp.American beef is usually good and often wonderful. American salt and pepper (糊椒粉)pots are confusing until you realize that the salt pot may look like a pepper pot except that the salt pots holes are bigger.Pepper is normally black rather than white.American mustard (芥末)is mild and normally eaten with hot dogs or hamburgers rather than meat.And that stuff in a dish that looks ice cream is actually whipped (搅拌过的)butter. Leftovers 吃剩的食物 You have probably heard that in American restaurants,if you cant finish your meal,you can put the remains in a doggy bagand take them home.This is quite true.If you leave some meat,in particular,your waiter may ask you if youd like him to put it into a little bag,or you can ask him to do this. 陈冬梅xx210260 西餐礼仪 西餐本来是西方国家的基本用餐礼仪,随着我国和这些国家的交往越来越密切,西餐礼仪的地位也是越来越重要。下面,我就来完整介绍一下西餐礼仪,并谈一谈我的体会。 吃西餐在很大程序上讲是在吃情调:大理石的壁炉、熠熠闪光的水晶灯、银色的烛台、缤纷的美酒,再加上人们优雅迷人的举止,这本身就是一幅动人的油画。为了在初尝西餐时举止更加娴熟,费些力气熟悉一下这些进餐礼仪,还是非常值得的。 我们知道,在西方,去饭店吃饭一般都要事先预约,在预约时,有几点要特别注意说清楚,首先要说明人数和时间,其次要表明是否要吸烟区或视野良好的座位。 如果是生日或其他特别的日子,可以告知宴会的目的和预算。在预定时间到达, 是基本的礼貌。再昂贵的休闲服,也不能随意穿着。 去高档的西餐厅,服装是要特别注意的。男士要穿整洁;女士要穿晚礼服或套装和有跟的鞋子,女士化妆要稍重因为餐厅内的光线较暗,如果指定穿正式的服装的话,男士必须打领带,进入餐厅时,男士应先开门,请女士进入,应请女士走在前面。入座、点酒都应请女士来品尝和决定。 就餐时间太早,中午11点或下午5点半就到了西餐厅、匆匆吃完就走、在餐桌上大谈生意、衣着不讲究、主菜吃的太慢影响下一道菜,或只点开胃菜不点主菜和甜点都是不礼貌的行为。这也是在进餐过程中需要注意的。高档西餐的开胃菜虽然份量很小,却很精致,是值得慢慢品尝的。就座时,身体要端正,手肘不要放在桌面上,不可跷足,与餐桌的距离以便于使用餐具为佳。餐 台上已摆好的餐具不要随意摆弄。将餐巾对折轻轻放在膝上。入座后,主人招呼,就可以开始进餐。 西餐的上菜次序一般是开胃菜,主食即饭后甜点。餐桌上,无论是作主人、陪客或宾客,都应与同桌的人交谈,特别是左右邻座。不要只同几个熟人或只同一两人说话。邻座如不相识,可先。这样就是整个餐桌的气氛不会尴尬。 取菜时,不要盛得过多。盘中食物吃完后,如不够,可以再取。如果本人不能吃或不爱吃的菜肴,当招待员上菜或主人夹菜时,不要拒绝,可取少量放在盘内,并表示“谢谢,够了。”对不合口味的菜,不要显露出难堪的表情。,以免使气氛尴尬。 注意吃东西要文雅。闭嘴咀嚼,喝汤不要啜,吃东西不要发出声音。如汤、菜太热,不要用嘴吹,等凉了再喝。嘴内的鱼刺、骨头不要直接外吐,用餐巾掩嘴,用手取出,或轻轻吐在叉上,放在菜盘内。 吃剩的菜,用过的餐具牙签,都应放在盘内,勿置桌上;嘴内有食物时,切勿说话;剔牙时,用手或餐巾遮口。 刀、叉等银器类皆称为Cut-lery。刀、叉又分为肉类用、鱼类用、前菜用、甜点用,而汤匙除了前菜用、汤用、咖啡用、茶用之外,还有调味料用汤匙。调味料用汤匙即是添加调味料时所使用的汤匙,多用于甜点或是鱼类料理。如今所使用的餐具依料理的变化而不断变化。正式西式料理的套餐中,常依不同料理的特点而配合使用各种不同形状的刀叉,并不是一开始就全部摆出来的。 下面来说说餐桌上的刀叉使用方法吧。使用刀叉进餐时,从外侧往内侧取用刀叉,要左手持叉,右手持刀;切东西时左手拿叉按住食物,右手执刀将其锯切成小块,然后用叉子送入口中。使用刀时,刀刃不可向外。进餐中 放下刀叉时,应摆成“八”字型,分别放在餐盘边上。刀刃朝向自身,表示还要继续吃。每吃完一道菜,将刀叉并拢放在盘中。如果是谈话,可以拿着刀叉,无需放下。不用刀时,也可以用右手持叉,但若需要作手势时,就应放下刀叉,千万不可手执刀叉在空中挥舞摇晃,也不要一手拿刀或叉,而另一支手拿餐巾擦嘴,也不可一手拿酒杯,另一支手拿叉取菜。要记住,任何时候,都不可将刀叉的一端放在盘上,另一端放在桌上。每次送入口中的食物不宜过多,在咀嚼时不要说话,更不可主动与人谈话。 当汤品上来时,要注意正确使用汤勺。汤不能吸着喝。先用汤匙由后往前将汤舀起,汤匙的底部放在下唇的位置将汤送入口中。汤匙与嘴部呈45角较好。身体上的半部略微前倾。碗中的汤剩下不多时,可用手指将碗略微抬高。如果汤用有握环的碗装,可直接拿住握环端起来喝。 有些西餐是需要用手拿着吃的,如果你不知道该不该用手拿着吃,就跟着主人做。记住:食物用浅盘上来时,吃前先放入自己的盘子。下面是一些可以用手拿着吃的食物:带芯的玉米,肋骨,带壳的蛤蚌和牡蛎,龙虾,三明治,干蛋糕,小甜饼,某些水果。脆熏肉,蛙腿,鸡翅和排骨(
