亚麻籽抗氧化肽制备、活性鉴定及降血糖研究摘要:

本文以亚麻籽为原料,采用酶解和超滤技术制备出亚麻籽抗氧化肽,并对其进行活性鉴定,探究其对血糖的降低作用。研究结果表明:亚麻籽抗氧化肽在不同酶解条件下的产率均在15%以上,最优条件为pH7.5、酶解时间6h、酶荷比1:100。超滤膜的筛选结果表明,分子量在1000Da的超滤膜筛选的亚麻籽抗氧化肽含量最高。活性鉴定结果表明,亚麻籽抗氧化肽具有较强的自由基清除能力和铁离子还原能力。同时,亚麻籽抗氧化肽对糖尿病小鼠的血糖有显著降低作用,其作用机制可能与促进胰岛素分泌和抑制肝糖原酶活性有关。因此,亚麻籽抗氧化肽可以作为一种天然、安全、有效的降血糖功能性食品原料,对开发降低血糖的食品及药物具有潜在的应用价值。

Abstract:

Inthispaper,flaxseedwasusedastherawmaterialtoprepareantioxidantpeptidesfromflaxseedthroughenzymatichydrolysisandultrafiltrationtechnology,andtheiractivitywasidentifiedtoexploretheireffectonbloodglucosereduction.Theresultsshowedthattheyieldofantioxidantpeptidesfromflaxseedwasmorethan15%underdifferentenzymatichydrolysisconditions,andtheoptimalconditionwaspH7.5,hydrolysistime6h,enzyme-loadratio1:100.Theresultsofultrafiltrationmembranescreeningshowedthatthecontentofantioxidantpeptidesscreenedbyultrafiltrationmembranewithamolecularweightof1000Dawasthehighest.Theactivityidentificationresultsshowedthatantioxidantpeptidesfromflaxseedhadstrongfreeradicalscavengingabilityandironionreductionability.Moreover,antioxidantpeptidesfromflaxseedhadasignificanteffectonreducingbloodglucoseindiabeticmice,anditsmechanismmayberelatedtopromotinginsulinsecretionandinhibitingliverglycogensynthaseactivity.Therefore,antioxidantpeptidesfromflaxseedcanbeusedasanatural,safeandeffectivefunctionalfoodmaterialforbloodglucosereduction,andhavepotentialapplicationvalueinthedevelopmentoffoodandmedicineforbloodglucosereduction.
