13、选用含铜量低的食物原料,以减少铜在体内的蓄积。附表仅列出常用食物含铜量,表中数据来源于中国食物成分表(2002)中国食物成分表(全国分省值及肝豆状核变性等有关图书资料,供肝豆状核变性患者及家属初步参考。有条件者还可以进一步参阅中国食物成分表(全国分省值,结合食物生产地和食物含水量等因素,综合分析判断选用含铜量低的食物原料。2.一般干燥食物含铜量0.5mg/100g的禁食,而新鲜含水量高的食物含铜量0.13mg/100g的禁食。食品原料建议主要选用精白米、特一粉或富强粉、鲜牛奶、鸡蛋白、淡水鱼、浅色蔬菜、浅色水果、色拉油及纯净水或蒸馏水等。铜的摄入量除了和原料的含铜量有关外,也和饮食的多少直接有
14、关,即进食越多则摄入越多。3.禁食动物内脏和血、虾蟹类、贝类、软体动物、龟鳖类、豆类及其制品、干果、坚果类、真菌类(香菇等)、藻类(紫菜等)、野菜及深色蔬菜,禁食含铜量高的中西药(如蜈蚣、全蝎、僵蚕、龙骨、牡蛎及蜂产品)。脱水蔬菜及咸蔬菜要少食。酱油等调味品和香料一般含铜偏高,可用少许调味而不能直接大量食用。猪油和肥肉尽管含铜量不太高,但是因为其为饱和脂肪酸且含有较高胆固醇,本病患者也不宜食用。4.禁止使用铜制的餐具和炊具,瓜果一定要去皮食用,(表皮含铜量高且可能残留农药)尽量食用天然食物,少食加工后的成品食物(因含太多不利于健康的防腐剂、色素、香精等添加剂,且加工设备可能含有铜制零部件)5.
