1、餐饮部各岗位工作细则：一、餐厅部行政主管职责：负责餐厅部员工技能、服务、日常工作管理。工作职责：1、 指导完成餐厅日常经营工作，检查员工的出勤状况，检查员工个人仪表及个人卫生、制服、头发、指甲、鞋子是否符合要求；2、 负责餐厅的清洁卫生工作，保持环境卫生，负责餐厅美化工作，抓好餐具、用具的清洁及消毒；3、 检查餐厅摆台标准、所需物品，确保工作效率4、 及时检查餐厅设备的情况，建立物资管理制度，做好维护保养的工作，并做好餐厅安全和防火工作；5、 控制餐厅低值易耗品成本，抓好成本核算、节能控制，加强物品原材料的管理，降低费用，增加盈利6、 重视属下员工培训工作，定期组织员工学习服务技巧和技能工作程

2、序1）每日班前检查服务员的仪表、仪容；2）了解当时用餐人数及要求，合理安排餐厅服务人员的工作，督促服务员做好清洁卫生和餐、酒具的准备工作；4）随时注意餐厅就人员动态和服务情况，要在现场进行指挥，遇有V.I.P客人或举行重要会议，要认真检查餐前工作和餐桌摆放是否符合标准，并要亲自上台服务，以确保服务的高水准；5）加强与客人的沟通，了解客人对饭菜的意见，与公关销售员加强合作，了解客人档案情况，妥善处理客人的投诉，并及时向中餐经理反映；6）定期检查设施和清点餐具，制定使用保洁制度，有问题及时向餐厅经理汇报；7）注意服务员的表现，随时纠正他们在服务中的失误、偏差，做好工作记录，作为评选每月最佳员工的依

5、每天做到自检。9、 使服务卫生质量更上一个新台阶。实施办法：1、 了解员工的思想动态，主动与员工交谈沟通。2、 不断在一二楼传菜部巡查，看到不规范行为立即指导并纠正。3、 对一些违反了规章制度的员工有教育、有批评、有关心爱护、奖优罚劣。4、 关心好新员工、监督好老员工。5、 抽出时间培训员工的服务技能。6、 卫生方面：班组长轮流检查、我监督落实卫生情况。7、 班前会公布打卡情况和卫生情况，让每位员工知道自己的服务质量和检查的卫生处数。夸奖先进、鞭策落后。8、 不定期的在班前会贯彻强调节能降耗意识。日常做好监督、发现有浪费现象先教育、如屡次不改的进行罚款。9、 每周三检查消防器材，周四质量报告上
